Tuna Fishcakes

Ingredients

400gm Cooked boiled potatoes
300gm/ 1/4 cup of Mayonnaise
425gm Can/Tin Tuna drained
1 Spring Onion chopped finely
1 Egg
1 cup (2 slices of crust) Fresh Breadcrumbs
60ml Oil for frying
Salt & Pepper

Method

Make Breadcrumbs
Use a food processor or cheese grater.

Step Two

Make Potato Mixure

ADD:
400gm Cooked boiled potatoes Mash lightly with a fork
300gm/ 1/4 cup of Mayonnaise
425gm Can/Tin Tuna drained
1 Spring Onion chopped finely

Blend with a fork and then use your hands to make small patties.

Step Three

Method

In bowl 1 add the breadcrumbs
In bowl 2 add one egg and beat with fork

Dip your potato pattie in egg then place in bowl 2 of breadcrumbs and use your clean hand to drissle breadcrumbs over the pattie. Place each pattie on a plate ready for cooking.

Heat a frying pan and add oil.

Gentle cook on medium heat for 3-4 minutes each side until golden and hot in the middle.

Step Four

cooked Fishcakes

Method

Serve with a fresh salad tossed in lime/lemon and olive oil with fries. Spoonful of mayonnaise or tartare sauce.
