Thai Green Curry with green beans

Ingredients

4cm Fresh Ginger
2 Chillis hot as you like them
2 Kaffir lime leaves (optional)
1/2 bunch Coriander leaves
4 cloves of Garlic
1 Stick Lemongrass
3 Spring Onions
300gm Chicken stock
200gm fine Green Beans
400mls Coconut Milk
Squirt Lime jiuce
Tablespoon Olive Oil
Salt & Pepper

Preperation
Remove both ends of Lemongrassand outer leaves then crush to seperate strands.
Remove skin from Ginger and Garlic
Trm Green Beans


Food Processor

ADD:
2 Chillis hot as you like them
2 Kaffir lime leaves (optional)
1/2 bunch Coriander leaves
4 cloves of Garlic
1 Stick Lemongrass
3 Spring Onions
Tablespoon Olive Oil

Blend until nice and smooth gritty looking paste.

Cook sauce

Heat a large saucepan and cook curry paste 1 minute and then add stock on high heat.
Add trim Green beans
Add add Coconut milk

Bring to boil and simmer on low heat for 5-10 mins until beans are cooked but not soggy.
Add salt & pepper to taste.
